Carbonated soda maker manufacturers have spring up all over the globe, offering machines that are ready to quench an aching thirst with sparkling water made with their version of the old-time pharmacy fountain machine. Depending on your style and the size of your pocketbook, the seltzer water that you serve either yourself or your guests can produce a fizzy taste sensation that varies between a mild buzz resembling a six day old spent can of opened soda, and a roller coaster ride of violent Pop Rocks/Coke like fizzy's gurgling up into your nose and brain, shutting down your complete system. An online search shows that the least expensive seltzer maker models come with disposable canisters of carbon dioxide (CO2). They use regular household tap water that is either plumbed in from the faucet or poured into a thermos-like bottle. How much seltzer they will carbonate depends both on the carbonization setting of the maker and the size of the CO2 canister. On some models, the bottle for holding the carbonized water is detachable from the maker and can be stored in the refrigerator. Some are made of glass, some are made of metal, and some are specially lined. If you get one of these for making your seltzer water, decide on whether you want glass or not, and get the one with material that you prefer. More expensive seltzer models install in your kitchen, fountain, or bar, and provide all the advantageous of a soda fountain on tap. After hooking up all the tubing to your water pipe and refrigerator, you can have cold carbonated seltzer water with this maker. If you are handy with tools and home projects, this shouldn't be a difficult installation. Most modern refrigerators already include inlet and outlet lines to produce cold, refrigerated water. But if your fridge isn't already hooked up, be prepared to disconnect and reconnect a water pipe under the sink so that you can route a small 1/4 inch polyethylene line to the fridge.
